Quince!

I've never managed to find quince before but am now in possession of two fine specimens. They smell absolutely gorgeous and have really odd fuzzy skin. Apologies for the poor photograph but I couldn't think of a good way to photograph an unwieldy fruit.
Ok, so has anyone got any ideas for what I can do to enjoy these fruits at their best? I understand they have to be cooked - what's your favourite way with quince? Do let me know in the comments!

Membrillo or Quince Jelly is always a good place to start and great served with cheese

I love quince added to apple pie or crumble. Cook the quince slices first in sugar syrup. The perfume is wonderful.

I've never seen a quince before. Never imagined thats what they would look like (not quite sure what i thought they would look like mind you)! Quince Jelly seems to be a very popular side to a cheese board these days.

I made a delish quince cake a whilte back - it was worth making simply to enjoy simmering the fruit and watching it turn pink!

I haven't been able to get my hands on any quince yet .... lucky you!

Looking forward to seeing which option you go for.

I have only recently got my hands on quinces - my favourite way is with apple in a fruit crumble - I agree with suelle about the perfumee - I also love quince jelly or honey baked quinces but the crumble is easiest way to feature it - and if you have too much syrup leftover it is great in a smoothie

Thorntons had 'seasonal' quince stuffed chocolates when I was in there yesterday. So as it is somewhere in the apple, pear family maybe it would work well with a chocolate recipe? I'm seeing quinces everywhere except round where I live, Must look harder :)

So, what did you end up making with them. I'm a big fan of jelly cos I love the perfume and colour. But also good in a crumble with apple. Also make delicious chutney.

Thank you all for the lovely ideas, I'll be spoilt for choice when I finally get round to dealing with my quinces!

CC - looking at your recipe it appears that quince are a weekend fruit - long poaching time required!

Choclette - I haven't don't anything with them yet, but luckily they seem to be keeping quite well!

I've made membrillo before and it was so time consuming I can't say I would do it again. Quince jelly, or quince marmalade, on the other hand...
